Despite its playful name, Chocolate Salami is a rich, indulgent log of chocolate stirred through with crunchy biscuits, nuts, dried fruit, and marshmallows, then finished with a snowy dusting of icing sugar to give it that classic ‘salami’ look. Wrapped up with festive twine, it becomes the perfect artisan-style homemade present.

Chocolate Salami Recipe

Makes 2 logs

Ingredients

  • 300g milk or dark chocolate, chopped

  • 100g butter, cubed

  • 60g golden syrup 

  • 300g digestive biscuits, crushed

  • 100g mixed dried fruits + seeds

  • 50g mini marshmallows


Method

  1. Melt the base
    Gently heat the chocolate, butter and golden syrup together in a saucepan over a low heat, or melt slowly in the microwave. Stir often until smooth and glossy.

  2. Prepare the crunch
    Crush the digestives, either by giving them a good bash in a bag with a rolling pin or pulsing lightly in a processor. You want a combination of fine crumbs with a few small chunks for texture.

  3. Combine everything
    Remove the melted chocolate mixture from the heat and fold in the crushed biscuits, dried fruits and seeds, and mini marshmallows. Mix until everything is evenly coated.

  4. Shape the salamis
    Lay two overlapping sheets of clingfilm on your work surface and divide the mixture into two equal portions. Spoon one half onto the clingfilm and shape into a log. Roll it up tightly, twisting the ends to secure. Repeat with the second half.

  5. Chill overnight
    Wrap each log in foil and pop them into the fridge to firm up overnight.

  6. Finish and decorate
    Unwrap the chilled logs, dust them generously with icing sugar, and tie with festive twine to give that classic salami appearance. Wrap in cellophane and add a ribbon if gifting.

  • Keeps for 1 week at room temperature

  • Lasts for 2 weeks in the fridge

  • Freezer-friendly for up to 3 months — simply defrost overnight in an airtight container
