Looking for an easy summer holiday activity with your kids? Try making these tasty double chocolate chip cookies!

They are fun & easy to make with simple steps that children love, from mixing to tasting! Made with great ingredients including our very own hot chocolate powder for that bit of goodness. These perfect little snacks are great for picnics, beach days, or just because! Get the little ones involved and enjoy every making these scrummy cookies!

Ingredients:

  • 220g all-purpose flour
  • 50g Salcombe Dairy hot chocolate powder
  • 1 tsp baking powder
  • ½ tsp salt
  • 170g unsalted butter, softened
  • 150g caster sugar
  • 150g packed light brown sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 150g chocolate chips

Instructions:

  1. Preheat your oven to 175°C. Line baking sheets with parchment paper or silicone baking mats.

  2. In a medium bowl, whisk together the flour, hot chocolate powder, baking powder, and salt. 

  3. In a separate bowl, with an electric whisk beat the softened butter and sugars until light and fluffy (about 3-4 minutes).

  4. Next beat in the eggs, one at a time, ensuring each egg is fully incorporated before adding the next. Mix in the vanilla extract.

  5. Through a sieve gradually add the dry ingredients to the butter mixture. Be careful not to over-mix.

  6. Finally, gently fold in the chocolate chips (or chopped Salcombe Dairy bean to bar chocolate) until evenly distributed throughout the dough.

  7. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

  8. Bake in the preheated oven for 9-11 minutes, or until the edges are set and the centers still look slightly soft. The cookies will continue to cook as they cool on the baking sheets.

  9. Allow the cookies to cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.

Baking Hacks:

  • For extra chocolatey cookies, consider adding a mix of milk chocolate and dark chocolate chips.
  • Before transferring to a wire rack gentle place a cookie cutter over the top and with gentle circles gradually shape the warm cookies into even rounds.
  • To ensure even baking, bake one sheet at a time in the center of the oven.
  • Store the cookies in an airtight container at room temperature for up to a week.
