Our brand new truffle making machine arrived from Italy in July and was unwrapped by our chocolatiers with great excitement - we’d seen this Tuttuno piece of kit in action near Milan and were amazed at it’s ability to both create and fill chocolates at the same time. The machine achieves simultaneous dispensing by injecting both chocolate and filling at different times, creating both the outer jacket of the truffle and the inside filling.


French specialist chef Olivier then spent a week training up the Salcombe Dairy chocolate team on how make the perfect truffle centre recipes, and we trialed the first few flavours. These hand made centres were poured into the temperature controlled hopper on the machine dosing head, and production began in earnest. Watching the machine in action is mesmerising, and many of our visitors have been able to see it in action in the new Island Street shop, with the first few truffles rolling off the production line for tasting. 


The results? A crisp outer shell of delicate chocolate which melts in the mouth to reveal a pop of soft ganache filling. Perfection! We’re looking forward to dreaming up many new creations and making them on this whizzy new piece of kit...
